Laurine and Jeremy Sevenier opened their organic restaurant Les Saveurs de l'Escale in Saint André de Sangonis, near Clermont l'Hérault, and given its great success they have now opened a second restaurant in Nîmes called La Table de Cana. Both use entirely organic food and beverages. They also offer an excellent catering service.
Rather uniquely, there are no menus but everything is spread out in an 'eat as much as you want' buffet - 'buffet à volonté' as they say here. Their website promises you "an explosion of taste in each mouthful".
The chef and his team prepare each day a fresh buffet from seasonal produce from that day's market. You won't therefore get strawberries in December or tomatoes in January but you will get to try some fruits and vegetables that you might not have come across before - all produced locally. The buffet is beautifully laid out, with starters, main courses, cheeses and desserts - your only problem will be choosing what to try.
